I was recently given 2 butternut squashes. Ive never cooked them before so I dont really know what to do with them. All the recipes I'm finding are either a side dish or a soup. Ive never been a fan of soup so I'm at a loss. Anyone have any good recipes for something savory with this squash? Ive considered just letting the chickens have them.

That is a shame! Have you ever tried butternut squash soup? It is hands down the favorite of all the soups I make.
You can also just cut it up, toss it with a little olive oil and roast it with a little salt and pepper. It's delicious!
The chickens get the seeds and guts.
The dogs get the peels, chopped and steamed in the microwave with a little water for 3 minutes.

Soup is just not satisfying or filling. I'm hoping to find something like a casserole. Preferably something with meat. We are not vegetable people and I have to sneak it in to a dish usually or it goes bad in the fridge.

I think I'm just gonna turn it into pasta. I think if I put enough cheese and meat with it it'll hide the squash-ness. I've tried it with zucchini but it was not very good. I found a lasagna recipe with squash noodles.

It makes great pasta sauce.
Cream, chicken stock, butternut, onion, red pepper, white pepper, a little nutmeg. Roast the butternut first to intensify flavor then scoop out. Blend everything with a stick blender (my favorite kitchen gadget). Add some chicken. Pour over pasta. Done.

I made butternut squash pie, and loved it! Think pumpkin pie, but made with butternut squash.

I have roasted the seeds like pumpkin seeds too; also very good. Or give the guts and the seeds to the chickens. They'll love it.
