Our LP delivery guy found me a 3 burner cast iron cooker for $20 at a garage sale and thats my plan, He also told me about a steam juicer and I thought if anyone would know something about these it would be Miss Prissy, any knowledge out there?

GF always does her canning outside to save her stove from scratches ... Lehmans is a wonderful place to buy things... been there twice in person...you can spend the whole day just looking ... I have...lol

Regarding canning with water bath when pressure treating is recommended: It's a bit like crossing the street without looking on a rarely-traveled road -- you might get away with it for a lifetime, you might not. As long as you know and accept the risks, whatever; it's your family. But the risk is there no matter how clean and careful you are.

"Outbreaks of foodborne botulism involving two or more persons occur [in the US] most years and usually caused by eating contaminated home-canned foods."*

They decided to accept the risk.

Everyone I have grown up with, everyone far and wide that I have known use the boiling bath water method for their canning needs...enough said....

It's not anymore risk than crossing the street if you look both ways

The extension offices do test your gauge for free. I do it a couple times a year. But thats just your gauge. I'm talking about the whole thing.

Older canners from someone you don't know personally are not recommended because of safety concerns. Much like car seats. You don't know if they've been in an accident. So they check for things like microscopic cracks, pits, dents. Things that you can't necessarily see but that can compromise the safety. It's been a few years, so I don't know if this is still offered. If I remember correctly they could also fix some things.

Everyone I grew up with rode around without wearing seat belts. We all survived. My kids grew up wearing seat belts (as did I by that point). We can just agree to disagree, no problem.
