For pork chops, I literally just use salt. That's all a good pork chop needs.

They also need pepper.

Darn, I forgot pickled pigs feet and scrapple.

Hard to beat good green chili and pork or barbecued pulled pork sandwiches.

I used to use salt pork with my diced fried potatoes and also in my dry beans soup.
