As far as processing goes, I have been considering taking a seminar offered by Nancy at Yellowrose ranch. They have been offering different monthly events at their ranch one of which is proper procedures in processing fowl at home. I found them on facebook. They are students at UC Davis. You might want to check them out.
 
Sunny I can show you how to process. They are the only birds I have ever processed and it very fast and easy. I didn't skin them. I also didn't eat them. My neighbors were having a hard time, so I sent them over for them to try. They loved them.

Thanks Kim! You are a sweetie! Either the Davis folks or you, I don't care where I go but I really need to learn the proper procedures. For quail I like the skin on because I like them roasted but I pefer chicken skinned during processing cause I use it for so many things and the skin is not usually needed. Plus then I don't have to defeather it.

That's the way some friends of mine used to do it and they said it's super easy. I just never got around to learning.

It could be two or three years from now when I will be comfortable enough to have chickens again but I will plan something bigger next time

Maybe I should try some meaties next time around? I don't think they would get very loud esp. if I get females and they'd go to the freezer in less than a couple of months.
