Now is there a difference in the eggs to eat?

I assume you mean when fertile. Youll only notice a visual difference if you let them go too long and the embryo starts to develop. Get them out of the nest, into the cooler right away. This will halt embryo delvelopment and you'll never know.

The Chinese say it gives a man, well, er, increased 'vigor' to eat fertilized eggs. There is no scientific basis for this, but I keep eating them anyway..​
