calling any one from missouri

I made a whole wheat baguette from my sourdough discard. I did add yeast, but next time, I'm going to try letting it rise only from the sourdough, give it more time etc. This is really good, but I'd like to taste a bit more 'sour' in it.

Here's something about sourdough and sourness from King Arthur, I found it in the tips below their sourdough pizza crust recipe.. I think this would apply to breads as well.

  • Be aware of some sourdough dynamics here. The less-used your starter, the more liquid on top, the more sour it's likely to be; using a starter that hasn't been fed for weeks will yield a pizza crust that rises slowly, and tastes quite tangy. This type of crust is handy when you want to make dough in the morning, and have pizza ready for dinner. On the other hand, a starter that's fed regularly will yield a less-sour crust, one that will rise more quickly. This is a great "weekend" crust, as you can shape it at 8 a.m., and have pizza for lunch.

I have a pair of crested mint green eggers for sale. 7 weeks old, living in an unheated coop.

The pullet should lay a pretty light green egg, starting around April/May.

The cockerel has one blue egg gene and one pink-tinted brown egg gene, so he could produce offspring that lay a variety of egg colors including shades of green and blue, pink, and light cream.

They have been bred to be predator savvy in a free range environment, and are also friendly and easily handled. Located in Farmington, Missouri, about an hour south of St. Louis.

Attempt # 2. Yesterday I made a WW sourdough baguette with only sourdough starter as the leavening, no added yeast. It took about 2 hours to double in size, then I shaped it, put it in the pan and let it rise 2 more hours. It got wider than tall but it was crusty and delicious, with the sourdough tang.

I am really pleased to have been inspired in this thread to get back into bread making!
 
My daughter was outside collecting rocks for stepping stones yesterday and there was a little armadillo nearby, intent on digging little holes. She reached down and touched it. She said it didn't react so she petted it, and it was warm and leathery. She said it looked up at her and then resumed digging. I told her they can carry leprosy. She went in and washed her hands well.....
Google says 16% of them carry leprosy but 95% of us are immune to it.....
I went out to that area just now, and there it was, digging away. It looked up at me briefly, then went back to work.
