Calm and gentle Breed Question

I'm sure this is a loaded question but we are relatively newbies. We've had some RIR, Barred Rocks, and Americanas. However they all seem less then tolerable to being handled and scoot away from you.

With that being said, what are some of the better breeds for being docile, calm and allow tolerable to being handled? And is this more a function of handling as peeps or is it more inherent with the breed?

Mostly it is just sitting quietly in the run with them. Have a can of treats, toss them away from you sit quietly and watch them. Do so for several days, gradually throwing the treats a bit closer to you. Pretty soon they will eat out of your hand, pretty soon they will fly up to your lap.

They are a prey animal, so motion does upset them. Move slow, just sit there and watch.... meditate a little, enjoy the sun and they will get very used to you. Even if they are full grown.
