I got these two a few years back and can not remember what breed they were for the life of me. I'm sure I'll remember it once I hear it again, but I would love to get more like them and cannot remember what they're called.

Sussex. They are very pretty

Anyone have any ideas about how old chicks should be to start trying to figure out which breed is which? Also which are male and female?
We have 16 chicks, 2 weeks old as of Monday tomorrow. They have mostly fully feathered wings and some tail feathers but I don't know if they are old enough to have enough color to be distinguishing from each other.

I have the breeds list, just like five or six or so looked identical as chicks. Also I ordered 15 female and one male, but was just curious when they'd start to 'show' if male. They gave me a 95% correct sexing but still

It really depends, most breeds you can narrow down as day old chicks but confirm the breed when they are older. Gender guessing you need to be at least 6 weeks but some you can't tell for sure till they are laying or crowing.
