I recently incubated some of our eggs.
There were 4 blue eggs all the rest were shades of tan - dark brown..
None of the blue eggs hatched.
One of the chicks 100% looks like the blue egg layer and two others are similar in colors.
She is the only one of her kind here and I am 100% positive no blue eggs hatched!

What breed(s) of rooster do you have? What breeds are your hens?
No a hen will not go from laying blue to laying brown, however, certain mixes can yield chicks similar to your chick.
ETA - also, if the rooster is a blue egg laying breed and is put over a brown egg laying hen the chick will hatch from a brown egg but can be a blue/green egg layer if it is a pullet (it could also, just as easily, be a brown layer but have that "EE" look)

I'm guessing you have an Easter egger rooster? She's very similar to what I got mixing Ee and brown Leghorn, down to the funky comb. My birds from that cross laid large pale blue eggs.
