Can Hens Decide when they want to lay? Mad at being in a coop?

I would say it is much to open- You have a protected run, but no actually coop. The goat shed is more enclosed and so feels safe! Again chickens prefer enclosed cosy spaces to sleep and lay eggs. There is no protection from wind or rain or the sight of predators in that run. Make sure the nest boxes not overlook a wide open space, and create a coop for them to roost with 4 soild walls, plus ventilation. Make sure you have roosts high up, and the nest boxes lower than the roosts. Add fake eggs to the boxes will help with letting the chickens know where to lay. I have used golf balls for this!
