Can I grow the suggested herbs right inside the chicken yard for them to peck/eat? I also have tons of wheat straw to use as bedding

Growing herbs inside where your chickens have access will not have time to grow! Lol. I would grow the herbs elsewhere and offer them to your flock as a treat. They will gobble them up for sure!!!

Or do it but keep the birds off of it with a barricade until the plants are established. Then monitor and remove access as needed to allow them to recover.

I don't think it can survive if you put it in, I can imagine it to be eaten in a daily manner faster than it to grow back.

Best way to manage the plants would be to keep them fenced off with chicken wire, which would allow the chickens to pick off bits that they could reach while not allowing them to uproot the plants or eat them down to the ground. My flock can help themselves to carrot or pea leaves from the raised bed behind the run.
