Can I keep two roosters with 8 hens?

Oh that hen to rooster ratio that everyone refers to, yet never the same number nor the reasoning behind said ratio. Truth is it all depends on the space you are providing them, the males as individuals, the breeds and even the age. If you want to be safe rather than sorry, cull the males you find less desirable and keep only the best ones, which in your case would be one. If you want to go the route of keeping all the males and seeing how it goes, do so only if you have the space to separate them, and the heart to give them away
 
Just like your original rooster cause problems that had to be dealt with. These two may also (probably will) cause problems that have to be dealt with. Chickens can be much more heartless than their people owners.

Wishing they would all be nice, DOES NOT WORK. This will work UNTIL it doesn't, when it doesn't, you need a different plan.

We too have to many cockerels right now, and will be removing at least three of the six males out there soon. Nobody's being difficult yet, and I'm waiting to see if these six and seven month old youngsters 'stay nice', or if one or more of them gets bad ideas. And the first crowing efforts are so funny...
