Can they go without water and food for a day or 2?

I'm going to be out of town for a long weekend and I'm pretty sure I'll have enough feed and water for at least 2, 3 days in their coop. But the last day in case they finished their feed and water already, will my hens be ok or survive without anything?
 
I wouldn’t take that chance as chickens can dehydrate quick. I would have a neighbor or family member watch them for you providing fresh food/water each day. Checking and collecting eggs as necessary. Other option to make sure feeders and waterers will hold amount of food and water needed for each day till back.
 
Go get an extra water fountain. Work on an auto water system for the future.

Water is more important than feed. For example, humans can go three weeks without food but three days without water. (this is from memory but should be close).
 
I have the auto water system, it's a auto fill doggie bowl, and then have the pvc pipe feeders, two of them, both filled is a 1/2 of a bag, even with that, if I am gone more than 48 hrs, or think I will be then someone is called in to check on everything.
