Can you eat a chicken that dies or do they have to go through processi

I wouldn't eat it because you don't know what it died from, unless it died from your axe, I would not put it in my mouth.
In the country, you swing the chicken by the neck and break the neck to kill it. It takes 15 minutes or longer before the skin starts to release the feathers so you can get other stuff ready. Don't go by the stupid 2 hour salmonella rule. 99.9 % of the time there isn't going to be salmonella around anywhere and if cooking is supposed to kill salmonella, then just reheat it completely. It's like milk going bad, don't throw it away. Boil it or let it turn into buttermilk. Freezing milk and then unfreezing it also stops it from going bad

Recommending food handling procedures from the 'good old days' is not helpful, or safe. Food poisoning is no joke, sometime fatal, and there are good reasons that we want to be more careful than what you've mentioned above.
