can you eat older muscovy?

My aunts nieghbor is giving away a pair of ready to lay muscovy,I really want them but due to by law issues I would have to hide them for a while until my fence and nice shed is built. My question is that is I find they don't fit well being stealth and all, as being a meat bird will they still be edible as a older bird? I always wanted a pair, but if need be we will eat them.
 
Soak them in 1 cup salt/1 cup vinegar in 1 gallon water for 3 or 4 days in the refrigerator. The vinegar will tenderize them and improves their taste when roasted after being boiled for 45 minutes. Add to your favorite blend of herbs lots of orange zest from 2-3 large oranges and 1/2 cup honey, 1/2 cup olive oil--use it as a baste while roasting.

Or do what the Marx’s Brothers did— make Duck Soap.
