The trick to freezing cheese is to leave in the original package if at all possible,and wrap again in freezer paper or even newspaper. Then when you want to thaw it and not be crumbly .Then you completely thaw in the fridge and then bring out on the counter till room temp and then back in the fridge to store it.This is from Heines cheese house .When we go to Amish country we buy up wheels of cheese bring home and this was the instructions I was given when I ask about freezing.It works.
