I just got my order for my chocolate turkeys last week and noticed some were auburn color but most were a nice chocolate color. Anyhow if this means nothing what is a way to sex them as im kinda new with turkeys!

That is a flaw in the now chocolate turkeys. You do not want the red ones. as they grow they will have white markings and some with barred wings, don't want those either. Basically you only want to keep the ones that are pure chocolate from shanks to feathers with no white, red or barring in the wings.

So when breeding these unpure chocolates, a few Auburns,Silver Auburns and red carriers can pop out as well. It will take you a 3-4 generations to get them correct and alot of hard culling to get it done correctly and efficiently.

You must have gotten them from a hatchery ??

Yeah we dont buy/or like hatcheries but no one seemed to have the chocolates so we went with welp on them. Thanks for the info and look forward to breeding them!
