Just wanted to mention Labeling with date and contents is very important for food storage. This way you can rotate your stock keeping the newest in the back.
That goes for all preserving methods...

I don't like bacon to begin with, and on the rare occasion that I have it, it has to be nearly burnt. Slimy in the jar? No thank you. Why not just freeze it?
