Canning chicken question . . . NEW QUESTION P. 3 :)

Ok, so I thought you were some super human, processing 75 yourself.

Even still, putting up 75 chickens is quite a job. So you're still my hero.
 
Miss Katy take a deep breath and let it out slowly. I know the first time you crank up the pressure cooker its a bit un-nerving but once you have all those glorious jars of your own canned food sitting on the counter looking so pretty that pressure canner sound will sound beautiful to your ears. The whole pressure canning thing can get weirdly addictive. I love opening up a quart jar of my own chili beans adding a pint of seasoned ground beef and have chili done in 10 minutes. Honestly it takes me longer to get the cornbread out of the oven to go with it then it does for the chili to heat. Im sure your chicken will come out just fine,
PS I like to add a bit of dill weed to my jars of canned chicken...I just like that combo.
 
oh my gosh that was SOO intense. I am not feeling the joy of the pressure cooker yet!
soooo, I screwed up a bit . . . I missed the part where it said not to remove the rocker thing until after the lock goes down.
When the time was up, I turned off the burner and lifted the rocker thing to much screaming and whistling. The dogs ran outside, the chcikckens all sounded off, the cat looked at me like I was the stupidest thing walking and I just ran in circles pulling my hair and yelling oh no oh no oh no . . . finally I had the sense to replace the rocker thing, and the cat went upstairs for the rest of the day.

Soooo after everything cooled properly and I finally got to open the !@#$ thing. I have 6 beautiful pints, one with only half it's fluid and one with only 2/3 it's fluid. Are these good the way they are? Are the ones that look ok really ok?

They are probably all good but in general; anything I can that doesn't give me a warm fuzzy feeling goes in the refrigerator to be eaten in the next couple of weeks. I would probably do that with the jars that are short on liquid. You know you want to try it anyway. : )
 
LOL first of all let the canner set for 20-25 minutes before removing the jiggler.

I cant get that picture out of my head or stop LOL from your previous post.

I also leave the jars set on my counter for 2-3 days to make sure they are sealed and stay sealed before putting them away.
