Canning the Meaties

You can fry anything. ( Green beans or Snicker bars are the current fad)

Have you ever bought canned chicken at the grocery store, about the size of a tuna can?

That's what home canned chicken is, just better.

What a great idea for old roos or hens. I have been wondering what to do with mine when I grow them out for a year. I have to because of feathering before I can cull for breeding. That makes thing so much easier knowing that even that tough old meat will not be when canned. Now I am really looking forward to canning my older birds talk about tasy I bet they are real tasy.
 
Cybercat, last year was my first time to pressure can chicken, and I canned it bone-in. This is fine with large meaty peises like, legs, thighs, and breasts. Pieces with smaller bones though, it's hard to get the bones out, because they crumble. Not a real big deal, because if you miss a bit, it just kind of mushes down anyway, but I decided to do it differently, because of this. Backs, necks, maybe wings and drumsticks, I'll save to cook in the crock pot. They get plenty tender, and the bones are solid enough to remove more easily. I may can some wings and drumsticks, too, bone-in, they're pretty easy to de-bone. Thighs and breasts are easy to fillet, so I'll can those. Then I'll have the best of both.

That's all for older birds. Young tender meat birds, I'd rather freeze, so I can make fried chicken, or roast whole.

Pressure canned chicken bones are ok to feed pets, they don't splinter. They're soft enough not to be a problem. Good source of calcium and other minerals.
