I have raised a few Cayuga ducks to about 3 months old now. What is a good age to harvest and how much of a Cayuga can you eat and best way to clean this duck? Any feed back would be helpful before I dive in.
 
I think it's around 12 weeks. If you are plucking them, it's easier around that time because they don't have pin feathers yet.

As far as how much you can eat, depends what you want to make but you should be able to eat all of it.

I haven't processed any ducks yet but from what I've read, plucking and leaving skin (while a complete pain to do) is one of the better ways. Due to the meat possibly drying out if you were to do, say, a roast duck or something.
