Cheese lovers! If you could only eat one type of cheese what would it be?

Alrighty cheese lovers if you could only eat one type of cheese for the rest of your life what would it be? There is absolutely no reasoning behind this question it is simply just for fun. My choice would be Gruyere. I buy a 1-2 wedges a week and I was informed by someone stocking shelves at my local grocery store that I am basically the reason they keep it stocked
