Look up the recipes for Marron Glace on the internet, quite time consuming but an absolute delicacy, they cost one pound a chestnut here in England. Also, if you boil and puree them, add thick cream and icing sugar, you can use it for a yule log Christmas cake. There is a lovely recipe by Delia Smith. I highly recommend!!
