You can actually tell at birth by their wings! Works for me anyway.
This chart is for feathered birds like yours. Small chicks would be different.

I did this and they both have girl wings but then people tell me my sunshine could be a boy.
People telling could be the problem. B
Hatcheries use that . method. Not all, but some. It works for me, so if it doesn't work for you. Maybe you checked wrong.
Roosters can't fly, hence why this works.

Say what??

Feather sexable chicks are created by crossing a fast feathering male with a slow feathering female. This results in fast feathering pullets and slow feathering cockerels, and a difference in the primaries at hatch. Hatcheries use this method only when they have created feather sexable chicks. It does not work for most breeds. Vent sexing by far is the most common method used to determine gender.

As for "roosters not being able to fly", most heavy breeds of either sex don't fly well. They hover a few inches off the ground more than anything. But lightweight breeds like the Mediterraneans and game fowl can fly very well including the males.

They both try to fly and sit like if they were laying
You have one cockerel and one pullet.
