I have had a hen with an injury similar to that. I did not use stitches, but kept the entire area coated in triple antibiotic. Eventually the wound healed completely.
I would like to say we had a happy ending, but a couple of weeks after we put Hazel back with the flock after a look but don't touch integration, the same thing happened again. We decided to put her down as I could see putting her through a month long healing again. In our case, we never figured out who did the damage and have not had anything like that happen again.
