Chick pooping when i hold her

My chick, estrella, poops whenever i hold her. She is a buff laced polish chick and she is almost four weeks old. I keep her with her "sister" eclipsa and eclipsa never poops on me. Does anyone know why estrella keeps pooping on me?
 
Most (if not all) breeds of birds have no control over their bowels, they just poop when they need to wherever they happen to be in that moment. They can't be trained to use a litter box or ho in a certain area. I am new to chickens, but I always assumed this was the case with them as it was with other birds I've owned. Perhaps someone with more experience can provide a better answer.
 
Some chickens, even adults, are more apt to let loose of their poop gland when stressed from handling. I just had a six-year old hen hose me down this morning as I was giving her her daily medication for an injury. It was the smelly, runny variety, and I'd say she more than got even with me.
 
My hens always leave a present on my jacket as I carry them out to the broody-breaking pen. At least half go broody every summer. With chicks, you can literally squeeze the poop out of them when you hold them. That is how they clean off the vent to vent-sex them at the hatcheries according to a video I saw on "Dirty Jobs" once.
