Chicken all of a sudden acts blind, sneaking around, head jerking

The softgels I have found are fairly large, I tried to suck it out with a syringe but the gel itself is pretty thick and barely sucks up. Is there a way to dilute it? Water did not do the trick... The Pill itself is just too big to shove down her beak.

I've found that Vitamin E is very hard to dilute. Try slitting (careful with the knife!) the gel cap and squirting the oil on a few pieces of eggs or mealworms, etc. You could try also try just squirting the oil inside the beak after you make the slit.

Vitamin E is also hard to wash off (for me anyway).
 
Update: have been giving her Vitamin E daily without any noticeable improvement so far. She still acts weird, she is 'sneaking' around and bumping into the wall at times, I still don't think she can see anything even tho her eyes look fairly normal to me. Not sure what to do with this poor girl.
 
Sorry that she doesn’t seem to see well. Can she see a treat sprinkled on the ground in front of her? I would keep giving the vitamin E a little longer. She may need to be kept in a smaller area where things are familiar to her, so that she can find food and water.
 
No she does not see anything. I can put my hands around her face without touching her and she does not react, when I sit on the floor and she sits on my leg she walks away as if there isn't a 'drop off' I did this on hay so she wouldn't get hurt.
If I put water or food down she does not go to it, she 'finds' it by stepping on it and has survived fine so far. She is in a smaller area away from the rest of the flock as they were picking on her. I have her with another little one that wasn't accepted by the flock, and they seem to be tight friends.
 
I have no advice for helping her medical trouble, but I also have a blind bird (a pheasant), and he didn’t lose his sight till around 16 weeks or so, but he seems to have adjusted well.
He is in a spacious cage by himself, the floor is a big kitty litter box and the “litter” is his food, this way I know he can always find enough to eat. There is a perch in the middle that I don’t move and in the corner there is a little water fountain and the sound helps him find his water.
Just some ideas for you :)
 
I found one of my hens stuck in the coop this evening. She also acts like she can’t see and bumps into things. I put her in a cage by herself, but curious what happened to yours.
