Araucanas, are rumpless (so no tail) and the have tufts of feathers, not a generic "muff" like on the EEs. They also have a few specific colors. I can't recall what comb type they have, since I'm not as familiar with them (they're very hard to find here).
Ameraucanas have specific colors (Black, Blue, Blue Wheaten, Wheaten, and Splash (I believe) are ones I know off the top of my head), pea combs, slate legs with white bottoms, or with the black variety: black legs. They will always lay some sort of blue/olive/green egg. They have beards and muffs and Red/Brown eyes.
EEs are a mutt with at least some Ameraucana blood. They are sort of "loose" as far as general characteristics go. That is, they can be all sorts of colors, any eyes, beak, skin, and/or earlobe color. They can have Pea, Rose, Single, Buttercup, Cushion, Strawberry, or V-Shaped Combs. Any color of legs (pretty much slate or green though) and usually muffs and a beard. They usually lay blue/green eggs, but some lay "pink" and brown.
