Sometimes they get annoyed.
She may also be broody.

My advice would be to wait until they are off the nest/nesting box. Or wear gloves!!!

Many hens will peck when you are getting eggs, usually not a severe wound producing peck, fortunately. Broody hens will be more assertive, but not always.
I have one hen who pecks HARD when she's in a nest box, and not broody. For her, it's gloves, one hand holding her head, and the other hand getting the eggs. She isn't in my breeding group either, as I'd hate to think what kind of cockerels she'd produce!
