DH and I ate this tonight... It was excellent! Pretty inexpensive to make, too.
*Note: I do everything "too taste".
Flour torillas
Fresh pineapple (I used canned because it's cheaper.)
Boneless chicken breast, cut into slices
Red or orange sweet peppers, seeded and cut in strips (Frozen is cheaper and works just as well.)
Jamaican jerk seasoning
Cilantro
Lime
Coat nonstick skillet with cooking spray and heat on medium high. Add pineapple slices, cook 4-6 minutes, until brown, turning once. Remove. Chop into bite sized pieces.
Add oil to the same pan. Add chicken and peppers, along with jerk seasoning, to taste. Cook and stir over medium high, approx. 4-6 minutes, until chicken is no longer pink.
Mix chicken mixture and pipeapple. Serve on tortilla with cilantro and lime.
I used two chicken breasts, a half bag of frozen peppers and one can of pineapple. It fed DH and I, and there is enough for him to take for lunch tomorrow.
