Chicken Recipes?

What is the best way to prepare/cook older birds? I've never had much success with it as they always turn out tougher and drier than store bought. I generally keep birds for eggs but occasionally get overrun by roosters so I don't do this very often. But now I have 3 roosters and two hens, that were behaving badly and not producing eggs, in my freezer.

Are there any good slow cooked recipes out there?
 
I seem to remember my mom making a pot of Chicken and dumplings. The meat cooked for sometime ( to make tender )

I would think a slow cooker recipe would be good to cook the meat and then you could add it to something like chicken enchiladas where you add other ingredients to flavor and keep tender.

My two favorite things made from older birds are Coq Au Vin (Chicken in Wine, well literally translated it's Rooser In Wine) and Chicken Picatta (Chicken breast and capers in wine).

Also, we like to cook them slow, debone the meat and use it in meatpies, chicken and gravy, chicken a la king, enchilladas

I dug for hours looking for a recipe I used to make chicken enchiladas a couple of years ago with an old roo. It came out wonderful but for the life of me I can't find the recipe I used. Seems like I used two diff recipes and tweaked them to fit our needs & tastes. Cant even remember if I simmered the bird in spices or slow roasted it before deboning.
