Chicken shows near the Carolinas

I am in the Charlotte area and interested in showing some of my birds once they are old enough. I have some Polish, Black Australorps, Speckled Sussex, and Appenzeller Spitzhauben.. I know that the Appenzeller are not recognized in the US yet, but can you show breeds that are not yet recognized by the American Standard? My polish are babies still, Tolbunt (not a recognized color yet) and excited to see what they turn out like. I also have some "designer" chicks, not a recognized breed but so cool looking. They are Polish, Speckled Sussex, and Serama Mix.. yes a strange one but they are amazing and beautiful with little crests/mohawks. They are so friendly too.. Love them even if they can't be shown. Can non-recognized chickens be shown in any category? I am new to the shows.. learning.
