Chicken Soup?

Nice and cool here today so I am making chicken soup out of a young rooster anyone else having fresh chicken today?

No but we are processing a cornish-x tomorrow that is down in his legs so we may be having chicken soup soon.

Okay, so I didn't make soup. I made a stock instead.

1 whole bundle of organic celery
6 whole organic carrots
2 large onions
2 tablespoons fresh ground pepper
1 tablespoon fresh ground ground sea salt
8 chicken necks
1 large stockpot full of water

I let this simmer for about 6 hours. It reduced by half and my house smelled wonderful. I can't wait to use it! LOL
