Chicken Thigh Recipe

Hello everyone! This is one of my favorite recipes to make due to the ease and the fact that you can customize each piece for a person! If you like it spicy, use your favorite spicy mix! If you like it earthy, use more earthy herbs! The possibilities are endless for these thighs!
So, here goes:
Ingredients:
  • 4 Chicken Thighs (Bone-in/Skin-on, if preferred)
  • 2-3 medium golden yukon potatoes
  • 2 cups uncooked rice
  • 1 stick of butter
  • Seasoning of preference
  • 2 cans chicken broth
  • 1/2 c. water
Instructions:
  • Preheat oven to 375 degrees
  • Cut potatoes into pieces around 1.5-3" big
  • Pour rice into large oven-safe pot (this pot needs a lid)
  • Put cut potatoes on top of rice
  • Carefully pour the chicken broth and the water over potatoes and rice
  • Sear seasoning onto chicken thighs
  • Place chicken thighs on top of rice and potatoes
  • Cut the butter into tablespoon size pieces and place one on top of each thigh and the rest throughout the potatoes and rice
  • Cover and cook in oven for 40 minutes
  • After 40 minutes, uncover and cook an additional 10 minutes
  • Serve hot!
This is a very easy meal and is very hands-off after you get it in the oven! It's quick and I enjoy that each piece can be customized (i.e. my mom doesn't like heat, but I do). You can prepare the thighs in whatever way you want, and if you have a picky eater that doesn't like thighs, a cut breast will easily substitute! This, to me, is the ultimate customizable dish!
