Hello everyone! This is one of my favorite recipes to make due to the ease and the fact that you can customize each piece for a person! If you like it spicy, use your favorite spicy mix! If you like it earthy, use more earthy herbs! The possibilities are endless for these thighs!

- 4 Chicken Thighs (Bone-in/Skin-on, if preferred)
- 2-3 medium golden yukon potatoes
- 2 cups uncooked rice
- 1 stick of butter
- Seasoning of preference
- 2 cans chicken broth
- 1/2 c. water
- Preheat oven to 375 degrees
- Cut potatoes into pieces around 1.5-3" big
- Pour rice into large oven-safe pot (this pot needs a lid)
- Put cut potatoes on top of rice
- Carefully pour the chicken broth and the water over potatoes and rice
- Sear seasoning onto chicken thighs
- Place chicken thighs on top of rice and potatoes
- Cut the butter into tablespoon size pieces and place one on top of each thigh and the rest throughout the potatoes and rice
- Cover and cook in oven for 40 minutes
- After 40 minutes, uncover and cook an additional 10 minutes
- Serve hot!
