Chicken & Turtle Soup

What does turtle taste like? How about the texture? I don't know about box turtles, they are pets to me-but I have encountered some huge, mean, snapping turtles that I wouldn't feel bad about turning into a meal.

When I was a girl, I remember having fried turtle once. I very much liked it, but only had it the one time. As I recall, the texture and taste was very similar to.........(dare I say it here??).......chicken liver.
