fry an onion is some oil, add tblespoon of ginger and garlic. fry add chicken cubes. add 1 tblespoon of turmeric and garam masala, 2 tblespoons of curry powder, pinch of salt and chilli powder, fry let spices settle in for 10 mins addmango chutney to taste, more makes it sweeter,add one third of block coconut, same with evaporated milk, and sour or single cream, add fresh mango, ( make sure its squashy and fresh not too hard. then add some fresh coriander, bit more garam masala before serving. leave to flavour for 20 mins while you do rice. and roti. note if it goes too thick add evaporated milk or cream this is a very fast dish, usually 20 to 30 mins, playing around with the ingredients can make it differ slightly to your own choice.
