she leans her back end when I stack her back feet sometimes, could that be because I put them too close together? She also droops her tail when concentrating on food, not sure how to get her to keep it up

You can make an adjustable jump, a tire jump, weave poles, and the bases for a dog walk and teeter totter.
Agility may be a good confidence booster for your border collie!
