Chilli its the best food for this time of year

I am making Chilli tonight since it is wet and cold out. For some reason I always crave it around now. There is a interesting history article on winkipede well worth a read.

I am going to list my type of chilli making. Would love to see others recipes too. There are so many variations this should be a great thread.

Tamara's 5 bean chilli

1 whole onion carmelized
2 cloves of garlic chopped
1 pound of meat (any type you want)
1 can of chilli beans
1 can of black beans
1 can of dark kidney beans
1 can of garbonzo beans
1 can of northern bearns
3 small cans of tomatoe sauce (its is what i had on hand)
1 small bag of baby carrots (helps cut gas from beans)
1 can of whole or chopped tomatoes ( today i used cherry tomatoes since Ihad alot on hand)
kethsup use how much as needed I usually do 2 healthy squirts
sugar to cut acid of tomatoes couple tlbs or to taste
spices to taste as follow
chilli power
thyme
cumin
cayenne pepper
orageno
salt

I start with cooking onions till browned and add garlic then meat then beans and carrotts and all the rest. I cook on med while adding everything then turn down to simmer for the rest of the time. I will also change my beans too some if I can not find one. Like last time could not find carbonzo so use light kidneys another time use navey instead of northern. But the first 3 types of beans are a must for me.

So lets see your recipe. We just did half a cow so Ihave alot of meat to use for chilli. I just love it for these cold days.
 
Oh I love Chili ...it goes along with Hockey night up here ....

I just make it as I go ....
usually Two can diced tomato's
tomato paste
tomato juice
Tomato soup
diced celery/green peppers/onions/garlic
ground pork
ground beef
two cans of brown beans in Tomato sauce
Chili powder
Cumin
salt /pepper
sugar

I bring to a boil all the liquids and veggies and cook for an hour on low
I season the meat with garlic powder and chili powder for an hour while waiting
and then add the meat and let it cook on low for another hour and a half and then add the beans and cook another 30 minutes ...

If I am feeding adults I add Kidney beans drained and rinsed....maybe a little diced hot pepper .....my kids do not like Kidney beans or hot peppers
Kids love to eat it with natcho's and cheese ...

We just got half a cow also ....hubby put new burners on the BBQ so I have T Bone stks waiting for Sunday dinner or else I'd be making Chili !!!! Now I have a craving ...
 
Yum... good idea! I never put northern or black beans in my chili..
I'll have to try it..
 
2 lbs ground chuck
1 lb cooked beans-pinto or kidney
2 med. onions
1 green pepper
1 tomato
Chili powder
Cumin
Black pepper
Lawry's seasoned salt
Celery seed
Garlic
Oregano
Tomato soup or tomato sauce

Brown meat and onions, add everything else, cook on low for 1 hour

Occasioally we add elbow macaroni for chili mac
