It probably doesn't need to be said, but a colorful basket of eggs will put a smile on most people's faces. If it is for another bird lover, maybe try hatching eggs.

Hand made goods like candles are easy to make and the process of making them could also be part of the gift.

There are some really creative people here. I'm sure there are going to be some really good ideas.

Yes making candles is very fun!
 
There is a coffee roaster in a town near us. A bag of aromatic fresh roasted coffee makes a great gift, and if you need it more elaborate you could include mugs, french press, or pour over, etc.
 
I've made poured candles in tall glass containers and decorated the glass so it looks stained using tissue paper and mod podge.

@N F C made some really cute candle holders using egg shells to decorate the outside. There are also some blown egg ornaments, the boys and I are trying those this weekend. There's an article she wrote here https://www.backyardchickens.com/articles/creative-crafting-with-eggshells.72421/

This year we're giving each of our family members a chicken we raised and processed ourselves.
