Ciabatta bread - this one worked out really well, fast and easy

Yeah Mike take it easy youv'e had atough one................ I got mine in the oven now. I found a great way to flip these and it worked like a charm, after sqeezing the sides from underneath to create the wrinkles, I used those semi heavy thin plastic cutting boards to transfer and flip it worked like a charm and after you flip it you can easily see the wrinkles and how the idea was meant to be. Anyway really cool.

We have the panko breaded talapia filets in the oven (they are from Costco, soooooo good). Here is my "slaw recipe", realize this is a one off I created for this sandwich, as I needed a dressing to dress the "salad" part of the talapia sub, and a teriyaki/sesame glaze for the fish filet itself.

Mis en place
Salad:
1 cup very finely sliced cabbage
2 scallions chopped
1 carrot grated
1/2 red bell pepper, cut into thin matchstick pieces

Combine and set aside:

Dressing:
1 Tbls Honey
1/4 Cup Yoshidas marinade (any good thick teriyaki sauce would work)
1/2 teaspoon garlic, crushed and then finely chopped
1 tsp sesame seeds

1 Tbls Mae Ploy Sweet and Hot sauce
2 Tbls rice wine vinegar

Mix 1st group of ingredients in a small bowl until well combined. Microwave for 30 seconds, removed from microwave and then add the Mae Ploy and combine well with whisk. Set aside, drizzle about 3 tbls of the teriyaki/sesame glaze over your salad, then drizzle in the rice wine vinegar, toss and taste for seasoning/tartness. Slice a heated ciabatta roll lengthwise to open, cut a piece slightly larger than your talapia filet - add the talapia filet, then drizzle about 2 tsp. of the teriyaki glaze on the filet itself, then add as much of the "salad" as you can cram in there... Using this was a life saver in forming the dough, and made it effortless.

And they ended up very good, I will tweek it a tad bit more but MAN !! this one has good potential.

boy, you guys had a wonderful day without me!!! I can't wait to try this recipe. My new bread machine got here 2 days ago, I got the one I always dreamed of having, and I haven't had a moment to take it out of the box!!!
 
Oh, man that all looks great!

mylittlechickpea no, a hand mixer could not do it. It's too stiff by the time it's about 10 minutes in. Do you have a food processor with a dough blade? That might work.
 
We gee... sorry I didn't photo guys! Total DRAMA over here!

I will get not so great photos shortly of the last of the bread. 1/2 of it got given to the neighbor for coming to our rescue.

This evening my cat caught a wild bird and I had to pry it free... now I'm busy nursing it and figuring out what it is so I can release it.

BUT... this bread was incredible... have to try my hand at it again this weekend for sure. The taste was worth it even if the air bubble didn't come out perfect.

Al6517, I am for sure going to have to get me a bakers spatula (why I don't have one is beyond me, other then I just started with bread testing in the last year or so).
