City girl needs to know how to make beans.....

THE best cornbread you will ever eat:

Cornbread (my own)


1 egg, beaten
1 cup creamed-style canned corn
½ cup milk
2 T olive oil
1 cup self-rising yellow corn meal
1½ t baking powder
1/3 cup sugar
1 cup shredded cheddar cheese (or 50/50 cheddar/mozzarella)


Heat oven to 425 °. Grease 8" square pan. Combine all ingredients and mix thoroughly. Pour into pan and bake for 30 minutes.

Variations:

Tex-Mex

Substitute 1 cup Pace Picante Sauce for creamed-style corn and seasoned taco cheese for cheddar. Add 2 T chopped green chiles.

OOh, i forgot you guys can grow veggies fresh all year..

Garden and flash frozen veggies. Canned tomatoes, chilies and some things like water chestnuts, but most of what comes in here canned is cat food.

Laughing with you, though -- we all had to learn to cook -- I'm still learning and I'm on SS....

We've been married 10 years, I have been cooking, but this is new foods, I grew up in SF and can make asian food perfectly, italian and mexican's a snap, but fried anything? not so much, turns out people make fried chicken without an oven....?
