And she’s not overweight. They free range on 1/2 an acre during the day and late afternoon they get to free range on another acre or so when we are outside. She feels like a solid weight but def not overweight at all. I’ll just keep monitoring her.
It's extremely hard for us to tell if a bird is overweight just by looking at it.
They usually start building up fat deep down inside on their organs first.
If you're feeding daily treats, you might want to think about stopping.
 
I’m in south central louisiana and the weather has been hot in mid 80’s with a small short cool front of 70+ passing through every week or two. I know my grow outs have been drinking a ton of water. Do you think perhaps it’s just from a lot of water?
I think it's a very strong possibility.
I used to live in Spain and the chickens there pooped a similar looking offering from time to time. I used to worry a bit about it, but over the years I saw a lot of poop like in the picture you posted and once the cooler weather arrived, the poop returned to looking more solid.
Sometimes I saw a runny poop at such and such a time and a while later a completely normal looking poop.
Heat stress can and does produce watery poops from time to time, so as I wrote, monitor your hen and if she produces more normal looking poops througout 48 hours, I wouldn't worry.

I’m trying to understand if you are just giving advice on their diet or do you think this type of poop is because she must be overweight?

Well actually both.
I'm not quite so sure The bird is overweight but I believe that it is possible and highly likely that something is going on, especially since you have egg laying issues.

Right, I’m aware it could be her calcium intake is low. They also have oyster shell and shells fed back to them. So makes me wonder if she’s just not choosing to eat more calcium if needed or if the poop was related to the soft egg laying.

Not sure about the poop today. I gave her calcium with D when she laid the soft shell egg. Will see if/what she lays today. She doesn’t lay daily.
