I would think if you're going to do the processing yourself, so *can* easily do just one or two at a time, straight run and freezer camp for anyone too noisy would be the simplest approach, and give you a better chance of raising some larger roasters (if that's something you want) than just pullets would.

one year back when we used to buy chicks, we got all pullets, 200 of them.. they all dressed out 4 and 5 pounds.. that is big enough .
if you need more meat, cook two of them.. I think the meat is more tender from the hens.. probably because they are not as active as the roosters.. or maybe it was just a good year..
