Canning, Canning Canning. Today its........14 day sweet pickles, basil jelly, and another case of peaches. Also starting a crock of Deli Dills. I'm tired of jelly, so looking for something quick and easy. I'm thinking peach halves. Those fill a jar and go through a case quick, LOL.

Tomorrow Gingered Beets.

Yesterday, or was it the day before, it was B & B Pickles, Peach BBQ Sauce, Vanilla Extract & a small batch of dills.

Did I say I still have a case of peaches (SIGH), and another 10 lbs of Cukes.

THEN, I get to rest until all my tomatoes come in. And can the squash I have.

I know this isn't the canning thread, but ya'll can sympathize I'm sure. And I don't have to compete with the experts there, who I actually had to ask to define how much a 'bunch' of dill was. I'm such a novice and hate asking for help.

I've been up at 8 am and to bed no earlier than 3 am for the last 4 days. YAWN.

I'm looking for some bruised but still cannable pears for pear sauce. Does anyone know of a place that will sell bruised and bumped canning pears? I've been canning mostly just baked beans, black beans, pinto beans, chicken and chickpeas. I only have enough time in a day to do 2 rounds in the canner as each is 90 minutes at a time at pressure and then warm up, warm down,etc.

If you have a local Whole Foods or Natural Grocer you might check with them, otherwise maybe call some local orchards?

How hard is it to make dill pickles? I adore the tiny ones, and have always wanted to make some, when I finally get the cukes to grow and learn to harvest when they're tiny (Tried last year, had terrible luck but at the time I was way too busy to have attempted it, wound up discovering the cukes when they were huge, and only a handful of them at that). I have considered going to the farmers' markets out east of Pueblo to look for some, but would have no idea what to do with them if I found them.

I have never made dills before, I don't like them much, but friends and family do so I'm doing it this year. The ones I made a couple of days ago were easy enough. LOL, the hardest part was peeling the garlic. Wash cukes, put em in jars. Put spices and garlic in jars. Boil Vinegar & sugar mixture, pour over cukes, seal and water bath can. I got a lot of my recipes on the canning thread on here: https://www.backyardchickens.com/t/78434/what-are-you-canning-now I sort of compiled the ones I liked and do some every now and then. The ones I am starting are super easy, but take a long time. Deli Dills. Ya put the cukes into a crock (I use a 5 Gal plastic bucket) with spices. Pour over a vinegar/water/salt mixture, and except for skimming off the scum that forms after a week or so, you just let em sit for 3-6 weeks til they stop fermenting, them put in jars and water bath can.

I like the kinda canning that any idiot can do, LOL.

Well, were I willing to pay the price, I would try Wal Mart. ALL their fruit is bruised and bumped. (Can you see my tongue in my cheek?).

Baked beans are on my list for after the garden harvest rush. Can always use a recipe as I've never done these either. This year's my first year for Pressure Canning. You could be a nice gal and PM me your recipe? Or I can PM you my email addy. I love to exchange recipes. Altho none of them are originally mine.
 
Oh, since this is a chicken forum. I'm here to announce I now have 5 egg layers. One of my Wellies, who is now 24 weeks old FINALLY couldn't hold it in any longer, LOL. Only 5 more to go and I'll have a fully laying flock. Wheeeeeeeeeee. Am now giving a dozen eggs a week to our local fire dept. Would sure like to be able to up it to 2 dozen.
 
I am in Firestone, up north just east of Longmont. We can not have chickens...yet! I have been after the city to approve them but they are being stupid. I do have "button" quail, just one pair but that is enough for now, they are inside in a cage.
I would love to get 3 chickens for the eggs and just because they are fun to watch. Maybe someday soon!
