You can use a large cat litter box, put it I the corner of their enclosure, add litter (just not cat litter), add lots of hay (rabbits tend to "go" while eating), and any poop that ends up outside the box should be placed inside the box. Rabbits usually catch on pretty quick, especially if they're fixed, making litter training quite easy most times.
What breed of rabbit would you recommend to get?

It depends. The individuals personality is more important than the breed, but I wouldn't recommend small and fragile breeds such as the Netherland Dwarf to new owners or families with children.
Mini lops tend to be friendly, so are Rex (and mini Rex like Treb), Dutch, Polish.. But, any breed can be great when given a good life and lots of bonding time. Mixed breeds can often be found at rescues, and make great pets too.
It really depends on your personal preference.
