Conversion of duck eggs to hen eggs in recipe?

that's what i do. you still may need a little extra flour if it is for baking.

yep...prepare for super fluffy and light crust! so good. just feel your way. you'll know by the consistency if you need more flour. add little by little.

i would not suggest duck eggs for scrambling, they get a weird texture, but they are really good fried, poached and boiled.

i really like them when making pancakes especially nice and light.
