Cooking oatmeal overnight in crockpot?

If I'm cooking oatmeal in the crockpot over night but it's only going to cook from about 11:30pm to 4:00am would I set it on high or low?
 
Low. Steal cut oats work better for that. Alton Brown has an overnight oats recipe using steal cut oats. I used to make it for DH all the time. But I also used a small crock pot because when it was spread too thin over the bottom of the larger one it had a tendency to burn on the bottom.
 
Thanks. I had it on low but just turned it up to high a few minutes ago. I'll go set it back on low. It's in a small crockpot too. Hubby is getting up at 4:00 to go hunting and I wanted to make sure his breakfast would be done and ready.
 
Low, I'd think. On high, that is long enough for mine to cook a pot of dry beans. I don't presoak the beans, so that should say something about the power of a crockpot.

You can also prewarm a wide mouth stainless steel thermos & dump in boiling water & oatmeal. Stir & cap. Set aside in a reasonably warm place (i.e. not the cold garage). Should have cooked oatmeal in the a.m.
 
My recipe goes like this. Apricot-Almond Oatmeal
8 cups water, 2 cups steel cut oats, 2 cups chopped dried apricots, 1 teas cinnamon, 1/4 teas salt, 1/4 cup packed light brown sugar, 1/2 cup toasted sliced almonds.
Combine water, oats, apricots, cinnamon and salt in a 3 to 4 qt. slow cooker. cook, covered on low 6 hours. Stir in brown sugar, let sit 5 minutes. Top with almonds. 9 (1) cup servings. Can be made and put into fridge for a week. Reheat until warm. It is tasty...but makes a lot

Ive done altons recipe too, very good but I added raisins last time I did it and it wasn't very good at all. The raisins stewed all night with the oatmeal and by morning it was just too raisiny....way too sweet and the raisins had overpowered everything else...so add your raisins to the finished dish!
