Cooking old hens

I have a lot of old hens (3-4) years old) that need replaced by winter. I found some good ideas of what to do but have some questions.
1. When i let them rest in the fridge do i cover them with water? I read its best to cover them with wax paper so they can breathe, true?

2. I want to can stock as well as noodle soup, but can i can raw meat with a old hen or will it still be tough?

I think that's it for now. Any other advice is welcomed.
