Cooking with Bantam eggs

If they are silkie sized bantam eggs, I use 2. If they are smaller, I use 3. Keep in mind that you will have a greater percentage of yolk than with large eggs. = richer cakes, etc.

I have found that I and the rest of the family PREFER the bantam eggs because the yolks are nearly as big as standard eggs and the white is a little less. We love them - haven't baked with them yet though.....
