Cooking with duck eggs

How are ducks egg for scrambled eggs and omelets? My hubby had been told by a couple of people that they are rubbery; I have read that duck eggs are more delicate than chicken eggs and need to be cooked at a lower temp and for less time. I know they are great for baking. We don't have ducks yet and I don't know of anyone who has ducks that I could get eggs from to experiment.
 
I've seen no difference at all between them and chicken eggs, other than the duck eggs are larger with more yolk than white. The taste seems the same.
 
They aren't any different to cook with. I don't find them rubbery at all--although the shells are really hard to break. In fact, I think they make the best omlettes.
 
Glad to hear that. I know my hubby is hoping I'll change my mind about getting ducks (or chickens, for that matter). He's still not 100% sold on the idea but he has figured out where their pen will be and what it will look like. He's even concerned about one of the plants in the yard because it's poisonous (I told him it will be moved from the backyard to the frontyard). So far he hasn't come up with a good debate on why NOT to have them.....lol!!
 
I'm trying to convince my chicken egg customers that duck eggs are just as good, if not better. My old Hybrids have stopped producing so I only get 4-5 eggs a day which is not enough to supply the customers. I haven't had a chicken egg in weeks because of the surplus duck eggs.
One woman took 1/2 dozen to bake with but refused to try eating them as eggs. Apparently they're very good for baking with.
I did manage to convince another person to try some yesterday. Got a nice email from her last night, singing their praises.
I give them to the food bank but the clients are afraid of them.
I gave away a dozen more yesterday - 1 to the newspaper store guy and 1 to the tea store guy.

They're fertile, almost definitely, since my drake is with the ducks 24/7.
 
I have a customer in my copy shop who brings me veggie scraps for the ducks all the time. I offered her eggs and she turned green...LOL
 
duck eggs make great omlets and scrambled eggs. awesome for baking. i don't like them fried they tend to get rubbery due to the higher protien in them. but taste very good!
 
I was reading something about that just today! It said that because of the higher protien content, heat the pan first, melt your butter (or fat), then add the egg. put a bit of water in the pan, so it's more like poaching or simmering. Egg will take less time to cook as well.
